Combine all ingredients in a cocktail shaker. Add ice and shake vigorously. Strain into a cocktail glass over crushed ice. Garnish with a large pinch of fine coconut flakes over the cocktail. Drizzle extra coconut simple syrup if needed and add a mint leaf. Serve with a straw.
Coconut Simple Syrup: Steep 6 oz of coconut flakes in 1:1 (2 cups water, 2 cups sugar) simple syrup overnight. Strain coconut flakes out and keep the syrup refrigerated.
